Spicy Green Eggs and Ham - yes, please!

We always use our spice blends as seasonings instead of dip recipes and it's time to start sharing. We went to a family bbq this weekend and I decided to contribute deviled eggs - but not just your regular 'ole deviled eggs.  I'm always replacing cayenne in recipes with our Buccaneer Creole Spice Blend since it also adds a smoky and peppery flavor so this was a perfect place to substitute and I had just bought the big pack of avocados from Costco and I had to use them up.  I found a basic recipe online and with a few tweaks I had the appetizers I wanted to bring.  Deviled Eggs with a the creaminess of avocado and the spicy bite of our Buccaneer Creole Spice Blend.  With a bacon garnish to make my 'ham', I couldn't go wrong.

 

Here's your recipe. 

12 large eggs (hard-boiled, de-shelled and cut in half the usual way)

1/2 cup of mayo

1 tbsp lemon juice

1 tbsp mustard ( I had the fancy kind in the fridge, you can use either)

a bit of salt

a bit of pepper
1 avocado (diced into squares for easy smushing)

1 tbsp Buccaneer Creole Cayenne Spice Mix

Bacon! ( I'm not sure how much I made, or ate, but you just need it for garnish)

 

Mix the yolks, mayo, lemon juice, mustard, salt, pepper, avocado and 1/2 tbsp of our Buccaneer Creole Cayenne Spice Blend in a bowl.  A mortar and pestle works awesome but you could also use a hand held mixer, or a fork with a lot of elbow grease.  It's always good to taste after you've mixed.  If you like it spicier, just add a little more Buccaneer Creole Spice Blend.  Just keep in mind that we'll be garnishing with the spicy blend at the end of assembly.

Put this mixture in a piping bag and set aside.  It's pretty self explanatory but also set aside your egg whites (that you cut perfectly in half like your grandma would've). 

 

Cook your bacon.  

(I like to cook mine on a rack in the oven.  It comes out so crispy and I like to think it's a little bit healthier than the stovetop way, I mean it's not like it's sitting it's own grease.)   

Let it cool and then break into 2 inch pieces.  Try not to eat all of the bacon right now.

 

Now it's time to assemble.  It's basic deviled eggs here.  Pipe the yolk mixture into your egg whites.  You can do it with a spoon if you don't have a piping bag but make it pretty.  Insert a piece of bacon into the center of the yolk mixture.  Now sprinkle the tops with the remaining 1/2 tbsp of our Buccaneer Creole Cayenne Spice Blend. Boom! You've got some delicious and spicy deviled eggs.
